Jacques Cafe, which opened in late summer, is operated by Jacques Pauvert, a native of France who has worked on the French Riviera, in Los Angeles and on the Hawaiian Islands, including at the Ritz-Carlton Kapalua and most recently at Jacques Northshore Bistro, a neighborhood restaurant he owned and operated in Paia, Maui. Menu items served at the counter-service Las Vegas restaurant include hormone-free, grass-fed beef; free-range poultry; organic produce; and vegan, vegetarian and gluten-free dishes, as well as freshly baked pastries. Jacques Cafe, which is designed to serve “hearty yet healthy” food that is easy on the budget, has a 70-seat dining room and a patio that seats 45. Here’s a sample of the menu:

Breakfast: Langostino omelet, $10; pastrami omelet, $10; French toast, $6.50; two eggs any style, $6.50; peach or pear waffle, $7.95; gluten-free pancakes, $6.50.

Lunch sandwiches and salads: Seasoned beef brisket sandwich, $6.50; Amazing Tofu sandwich with red peppers and aioli, $7.50; turkey satay sandwich, $7.50; Caesar salad, $4.50 for half, $6.75 for whole; kale, apple and mushroom salad, $5 for half, $8.75 for whole; spinach salad, $5 for half, $8.75 for whole.

Dinner tapas: Rock shrimp and avocado tacos, $7.95; chicken finger tempura, $7.20; veggie spring rolls, $5.60; short rib tacos, $7.95.

Burgers and fries: Drive-In, $6.95; Deli (with pastrami), $7.95; salmon, $8.50; garden, $7.95; tilapia, $8.50.

Pastas and entrees: Spaghetti Bolognese, $8.90; spaghetti Alfredo, $8.90; spaghetti primavera, $8.90; Provence-style beef short ribs, $17; roasted half Cornish game hen, $15; rock shrimp risotto, $16; steelhead salmon belly, $19.95.

Breakfast is served from 7 to 10 a.m. Mondays through Saturdays, brunch from 8 a.m. to 2 p.m. Sundays, lunch from 10:30 a.m. to 4:30 p.m. Mondays through Saturdays, and dinner from 4:30 to 9 p.m. Mondays through Saturdays. Call 702-550-6363.
