Small Plates: Butter and Maple Syrup Popcorn

BUTTER AND MAPLE SYRUP POPCORN

3 tablespoons sunflower oil

Generous pinch of sea salt

3 ounces popcorn kernels

2 tablespoons butter

4 tablespoons maple syrup

Place the oil, salt and popcorn kernels in a large saucepan with a fitted lid. Heat the pan on the stovetop until the corn starts to pop, shake the pan (don’t be tempted to lift the lid at this stage) and continue to cook until the corn has stopped popping. Remove the pan from the stove and pour the popcorn into a large bowl.

Melt the butter in a small pan, stir in the maple syrup and simmer together for a few minutes, stirring constantly. Pour the buttery maple sauce over the popcorn and toss together until well coated.
