Pork belly is braised with bourbon, apple juice and apple cider vinegar for five hours, pan-seared until crispy and served on a bed of white grits with white Vermont cheddar, $9.95.

Vegan cheesecake

A nondairy New York-style cheesecake in a graham-cracker crust is served with coconut cream and bourbon caramel sauce, $6.
