The signature cocktail of Aria’s new seafood restaurant, Catch, uses yuzu sake to complement the Asian touches of its food menu. A touch of bright cotton candy provides a dose of the fabulous.

Ingredients

■ 1½ ounces Absolut Elyx vodka

■ ¾ ounce fresh lemon juice

■ 1 ounce yuzu sake

■ ½ ounce simple syrup

Garnish

■ Cotton candy

Directions

Shake ingredients with ice. Strain into coupe glass over cotton candy.
