Longtime Las Vegas chef opens new butcher shop and deli
Chef Marc Marrone and his business partner, Todd Lunger, both longtime Las Vegas hospitality figures, just opened their Diamond Spur Butcher Shop & Deli on South Fort Apache Road in the southwest valley. The debut, as reported by Neon, has been highly anticipated, not least because of Marrone’s involvement with high-profile Vegas restaurant projects over the years.
On the butcher side, the shop is the exclusive retailer for Diamond Spur Provisions & Meats, a purveyor of sustainably ranched (including pasture raising) beef and beef products. The shop also sells responsibly raised pork, poultry and eggs, plus dry goods. The butcher shop team oversees the sourcing and processing of the beef and other proteins.
On the deli side, the menu features a chicken Parm sandwich, rotisserie chicken, in-house ground burger, steak and beef tallow frites, and soft-serve cones.
The butcher shop and deli draws inspiration from Marrone’s childhood.
“I got inspired to re-create the vintage atmosphere of an Arthur Avenue, Bronx, meat market that I grew up with alongside my Italian family in New York City,” he said. “It’s something that’s really missing here, and I think something this part of Las Vegas needs.”
