Longtime Las Vegas chef to open butcher shop and deli
Marc Marrone — the prolific Las Vegas chef and restaurateur whose CV ranges from corporate executive chef for Tao Group to his former Gemma Gemma pizza and Graffiti Bao restaurants, from launching HallPass food hall in Salt Lake City to co-founding Diamond Spur Provisions & Meats, a sustainable beef purveyor that helps restore wildlife habitats — has a new project.
Marrone and his business partner, Todd Lunger, are opening a Diamond Spur butcher shop and deli that brings beef from the company’s portfolio of natural regenerative ranches to retail customers, the chef announced in an Instagram post.
These ranches allow cattle to graze naturally on pastures; eschew the use of antibiotics, hormones and chemical pesticides; and are certified by the Audubon Conservation Ranching Program for practices that promote soil health, biodiversity and animal welfare.
“After being fed up with the current state of our food system and the lack of affordable clean food for families, we decided to start with the idea of bringing our beef direct from our all-natural regenerative ranches to our community, without the corporate greed and price gouging,” Marrone says in the post.
Besides ranch beef, the butcher shop and deli, 8241 S. Fort Apache Road, near Rhodes Ranch, will offer non-GMO eggs, chicken and pork from neighbor ranches, as well as classic Italian deli sandwiches, rotisserie chicken, steak frites, beef tallow fries and more, according to the post.
