Popular breakfast spot moving Henderson shop to new location

The red velvet pancakes aren’t going far.

BabyStacks Cafe, the Las Vegas pancake specialist open for breakfast, lunch and brunch, is closing its Henderson shop following service on May 25 after 13 years in business, according to a recent Instagram post. The shop, at 550 N. Stephanie St., Suite D, is relocating to 675 Mall Ring Circle, about a half-mile north just off Stephanie.

Today, BabyStacks (founded as BabyCakes on North Buffalo Drive in 2010) has eight stores across the Las Vegas Valley, from Blue Diamond to Centennial Hills, Henderson to Summerlin and points in between.

When it comes to pancakes, served in a full stack of six or a short stack of three, BabyStacks doesn’t mess around.

Red velvet pancakes are topped with chocolate crumbles; pour on the cream cheese syrup. Bacon pancakes are short and salty: crisp pieces cooked into the batter. For a German chocolate version, coconut cooks in chocolate batter, with the cakes topped by caramelized coconut and pecans. The PB & ??? allows diners to fill in the blanks, finishing peanut butter pancakes with jelly, bananas or chocolate chips. On the sweet side, the menu also encompasses crêpes, French toast and waffles.

On the savory side, there are morning mainstays like corned beef hash and eggs and chicken fried steak and eggs, along with a kalua pork Benedict, adobo fried rice, loco moco (classic or topped with Hawaiian-style chili), and sandwiches and burgers, including fried chicken breast on toasted brioche and a BabyStacks burger with bacon, a fried egg, cheddar and aïoli.
