SoCal taco spot opens its first Nevada location in Henderson
Chuy’s Baja Grill, a Cal-Mex restaurant from Southern California whose mission is “to bring the beach to you, one taco at a time,” recently opened its first Nevada location, on Saint Rose Parkway in Henderson. This restaurant operates under the name Chuy’s, without the Baja Grill.
On the menu
Tacos fashioned using wild-caught, organic and grass-fed ingredients anchor the menu: grilled wild-caught mahi with creamy avocado sauce, pulled organic chicken breast with pico de gallo, slow-cooked grass-fed birra backed by consommé and more.
Four burritos (including a carnitas version stuffed with seasoned organic pork), four sandwiches (among them wild-caught ahi on brioche) and a trio of burgers (look for a signature Chuy’s option with a grass-fed patty) also make an appearance on the menu, along with soups, salads, and munchies like guacamole, skewers of wild-caught shrimp, and Baja sticks featuring fried tortillas rolled up with pulled organic chicken, grilled bell peppers and onions.
Grand opening party
From 10:30 a.m. to 8 p.m. Saturday, Chuy’s, 2560 Saint Rose Parkway, Suite 150, is throwing a grand opening celebration with the first 100 customers receiving a $10 gift card and a free taco.
Chuy’s Baja Grill was founded in Cupertino, California, in 1982. Today, there are locations in the state in Bakersfield and Simi Valley. Chuy’s in California and Nevada are not affiliated with the Chuy’s Tex-Mex chain in Texas and three surrounding states, nor with the MariChuy’s Mexican restaurant in Reno (which locals have always called Chuy’s).
