A 100 percent beef brisket burger cooked over Budweiser beechwood and hardwood charcoal is topped with pepperjack cheese, chipotle mayo, crispy jalapeno peppers and guacamole, $10.95

Tableside guacamole — Cabo, Boulder, Sunset and Santa Fe Stations

Tailor this guacamole to your own taste with (in addition to avocados) tomatoes, serrano chilies, red onion, cilantro and/or lime, $8.99.

Guy’s Guacamole — El Burro Borracho, Rio

It starts with avocados, serrano chili, sweet onion, radish, lime and cilantro — spiced mild, medium or hot — $10, and you can add chorizo, chicharrones, roasted corn, cucumber, pepitas, roasted poblanos, roasted pineapple or crumbled cotija cheese, $2 each, and/or shrimp, crab or lobster, $4 each.

Tableside guacamole — Hecho en Vegas, MGM Grand

Avocados can be mixed with serrano chilies, cilantro, onions, tomatoes, freshly squeezed lime juice and sea salt, $15.

CW Guacamole Trio — Cabo Wabo, Miracle Mile Shops

Avocado lovers get a triple threat with this one: blue crab and microgreens guacamole, guacamole with crispy applewood-smoked bacon and jicama and cucumber guacamole, $15.95.
